00:00:01.139 --> 00:00:03.750
Welcome to the Perfectly Preserved Podcast.
00:00:03.810 --> 00:00:05.309
I'm your host Jenny Gomes.
00:00:05.370 --> 00:00:06.660
And I'm Anna Cash.
00:00:06.809 --> 00:00:13.529
Here we come together to bring you a podcast all about preserving food safely, easily, and dare I say, perfectly.
00:00:13.529 --> 00:00:13.919
At home.
00:00:14.099 --> 00:00:18.989
We are master food preservers moms wives, and we love talking about canning.
00:00:19.469 --> 00:00:21.539
ready to can like a master preserver.
00:00:21.570 --> 00:00:23.100
Let's get into today's episode.
00:00:26.489 --> 00:00:29.410
Welcome back to another episode of The Perfectly Preserved Podcast.
00:00:29.410 --> 00:00:31.329
I'm Anna here with my co-host, Jenny.
00:00:31.379 --> 00:00:36.570
we are going to be talking to you today about the best tools for tomato processing.
00:00:36.950 --> 00:00:44.390
Tomatoes are the most canned product in the United States, and so it's important that we cover some of the tools that you might use for that.
00:00:44.390 --> 00:00:47.960
It's going to be a really great episode, so stay tuned.
00:00:48.259 --> 00:00:52.789
For those of you that are new to the podcast, welcome, we always want.
00:00:52.804 --> 00:00:53.975
A rating and review.
00:00:53.975 --> 00:01:00.445
So if you have not done that, please do for the first time ever, we are also on YouTube, so check us out there.
00:01:00.445 --> 00:01:03.924
Perfectly preserved, and let's get started.
00:01:03.924 --> 00:01:07.135
Jenny, what do we have in this episode today?
00:01:07.295 --> 00:01:08.959
Okay, so you said so.
00:01:09.230 --> 00:01:14.659
Correctly that tomatoes are the most commonly canned food in America, which is amazing.
00:01:15.060 --> 00:01:23.530
And it's very interesting because they're not the easiest, that's not to discourage you or to say that they're hard, but they do have a few ins and outs.
00:01:23.560 --> 00:01:25.239
If you're brand new to canning and new to.
00:01:25.609 --> 00:01:26.329
Tomatoes.
00:01:26.359 --> 00:01:30.439
we do have a couple episodes at the beginning of our season one that you should check out.
00:01:30.439 --> 00:01:34.930
That's all things, canning tomatoes, all about proper acidification.
00:01:35.299 --> 00:01:45.230
Good recipes to try and just a really great primer at the beginning of our season one, I think, all about tomatoes, so you can definitely check that out if you're brand new.
00:01:45.590 --> 00:01:49.700
But in this episode we wanna talk about the tools that make tomatoes easier.
00:01:50.060 --> 00:02:06.549
I think too, there's several things that we're gonna cover that will just give you options for both peeling coring and then however you want to work up those tomatoes so that they are useful to you when you are opening the jar.
00:02:06.629 --> 00:02:12.919
the whole progression is really important that you think about what do I want at the end result that will be the most useful to me.
00:02:13.370 --> 00:02:21.610
I always think it's interesting to talk to people that have been canning a while and hear so what is the thing you can with your tomatoes?
00:02:21.610 --> 00:02:22.810
Do you do tomato sauce?
00:02:22.860 --> 00:02:32.889
Some people drill down and make enchilada sauce and tomato pasta sauce and make many different, very similar but differently seasoned tomato products.
00:02:32.889 --> 00:02:34.210
I think that's very interesting.
00:02:34.356 --> 00:02:36.456
So Anna, tell us what do you can.
00:02:36.981 --> 00:02:38.872
In your tomatoes, and then we'll dive into the tools.
00:02:39.127 --> 00:02:39.758
Oh, okay.
00:02:39.758 --> 00:02:40.897
I love this question.
00:02:40.948 --> 00:02:45.027
In the beginning, I also did a lot of different tomato products.
00:02:45.057 --> 00:02:51.478
I did enchilada sauce, I did marinara, I did tomato sauce, tomato paste.
00:02:51.837 --> 00:02:54.237
And what I've learned over the years is that.
00:02:55.068 --> 00:03:01.877
I like having really two, maybe three major tomato products in my pantry, and then I work off of that.
00:03:02.298 --> 00:03:09.027
So number one is salsa number two is diced tomatoes, and number three is a tomato sauce.
00:03:09.508 --> 00:03:17.728
So with those three, I can pretty much make any type of cooked tomato product that I want.
00:03:18.638 --> 00:03:19.522
I usually do.
00:03:20.318 --> 00:03:33.052
Oh, I would say probably 50 pints of diced tomatoes, just because we use them all the I use them, strain them and I use that as actually my pizza sauce Just a straight canned diced tomato.
00:03:33.802 --> 00:03:39.377
And then obviously salsa for eating and tomato sauce for, pasta dishes.
00:03:39.377 --> 00:03:41.116
So what about you, Jenny?
00:03:41.116 --> 00:03:43.817
What do you, what tomato products do you can.
00:03:43.937 --> 00:03:47.706
So I do, I can zero tomato salsa.
00:03:47.826 --> 00:03:50.556
My husband really likes a fresh tomato salsa.
00:03:50.917 --> 00:03:57.007
I have canned a very good salsa verde, which is made with eos, so that's does not apply for this episode at all.
00:03:57.426 --> 00:04:00.483
But I make, I call it easy tomato sauce.
00:04:00.483 --> 00:04:03.693
So it's a pretty basic, not super thick.
00:04:04.052 --> 00:04:07.913
A lot of people spend a lot of time cooking their down, so it's super thick and I leave mine fairly thin.
00:04:08.532 --> 00:04:09.312
Tomato sauce.
00:04:09.943 --> 00:04:15.492
And I would say that is the vast majority I do can some marinara sauce.
00:04:15.643 --> 00:04:24.463
And that is a recipe that I have in my cookbook, the Pressure Canning Cookbook, but it's based very closely off of two different tested recipes.
00:04:25.463 --> 00:04:28.733
So that's a sauce that has ground meat in it as well as tomato.
00:04:29.033 --> 00:04:34.523
But those are, I find like just as simple tomato sauce is the most useful for me.
00:04:35.168 --> 00:04:39.908
Then I can always open the jar up and then make it be the thing I need it to be.
00:04:39.908 --> 00:04:51.598
And because you've done all the work of peeling and cooking and chopping and all that, it's very easy to turn it into tomato, pasta sauce or very easy to turn it into your pizza sauce.
00:04:51.807 --> 00:04:52.497
Very simple.
00:04:52.858 --> 00:04:54.048
So that's how I do it.
00:04:54.048 --> 00:04:55.697
But, and I think it's cool.
00:04:55.697 --> 00:05:02.177
People out there do, like we said, like enchilada sauce or like hot sauce, they make all the different.
00:05:03.572 --> 00:05:06.723
Little specific niche tomato sauces, and that's cool too.
00:05:06.723 --> 00:05:11.882
Just as long as you're using a tested recipe, knock yourself out, and that's how you find things your family will love.
00:05:11.913 --> 00:05:13.502
So knock yourself out.
00:05:14.002 --> 00:05:18.262
Anna, let's start with the beginning of our tool list for preserving tomatoes.
00:05:18.682 --> 00:05:21.473
So first part is sometimes the hardest.
00:05:21.923 --> 00:05:22.583
Peeling.
00:05:22.882 --> 00:05:26.473
What is your method or what tools do we have for peeling those tomatoes?
00:05:26.473 --> 00:05:27.492
You have the best tip of all.
00:05:27.492 --> 00:05:28.423
Everybody get a pencil.
00:05:28.709 --> 00:05:32.100
It's out of laziness and exhaustion.
00:05:32.100 --> 00:05:43.629
At the end of the summer, I have this, you pick farm, really close by me, and at the beginning of October, they shut off the water to the tomato fields and they let you come and glean tomatoes.
00:05:43.750 --> 00:05:46.120
And so I gather a group of friends.
00:05:46.120 --> 00:05:50.199
We go and pick tomatoes that are either red or green.
00:05:50.625 --> 00:05:54.225
And we donate half to the food bank, and then we bring the other half home.
00:05:54.225 --> 00:05:57.824
And by October I am usually burned out.
00:05:57.824 --> 00:06:02.540
I am exhausted, so I end up washing whatever Red tomatoes we have.
00:06:03.220 --> 00:06:09.649
And then just putting them in Ziploc bags and throwing them in my freezer, kicking that can down the road.
00:06:10.079 --> 00:06:16.439
And then when I want to use tomatoes or make something with tomatoes, I pull the bag out and let it thaw in the sink.
00:06:16.829 --> 00:06:26.040
And magically when those unthaw, the skins just slip right off and there's no boiling, there's no cutting xs in the bottom of the tomatoes.
00:06:26.040 --> 00:06:28.500
You just slip those skins right off.
00:06:28.690 --> 00:06:29.411
Amazing.
00:06:29.440 --> 00:06:37.870
So to be super clear, Anna just freezes the whole tomato, the whole thing without doing anything to it other than watching it off.
00:06:38.290 --> 00:06:42.730
You freeze them and then they're round little globes and then.
00:06:42.899 --> 00:06:47.550
When you're ready to work them up, either cook them fresh or can them, or whatever you wanna do with them.
00:06:47.579 --> 00:06:51.060
Then you let'em defrost a little bit, the skin slide right off.
00:06:51.120 --> 00:06:55.649
Just pull'em off like a beanie, a little hat, blo, and then they're ready to go.
00:06:55.800 --> 00:06:57.089
That's incredible.
00:06:57.699 --> 00:07:03.500
After Anna told me this I applied the same tactic to whole peaches.
00:07:03.740 --> 00:07:05.689
So this is not a peach episode, but here's a peach tip.
00:07:06.064 --> 00:07:17.264
You can do the same two peaches and I did this last summer or excuse me, the summer before and this last, this, what I did the summer before lasted me a whole year.
00:07:17.595 --> 00:07:23.055
My dad has one peach tree, literally 100 years old, and it had so many peaches.
00:07:23.055 --> 00:07:26.475
It was breaking branches and he called and he was like, I got some peaches for you.
00:07:26.475 --> 00:07:29.264
So I just go over there thinking I'm gonna get a box of peaches.
00:07:29.264 --> 00:07:30.944
No, I had a car full of peaches.
00:07:31.680 --> 00:07:33.569
And like Anna said,
00:07:33.600 --> 00:07:33.660
no.
00:07:33.783 --> 00:07:38.009
sometimes that's all you've got is just, you know, just a little bit of, any wits left.
00:07:38.009 --> 00:07:40.588
And so I just put them all in the chest freezer, just a whole.
00:07:41.129 --> 00:07:43.177
And then I'm such a creature of habit.
00:07:43.206 --> 00:07:47.286
I had a three peach smoothie every day for lunch.
00:07:47.367 --> 00:07:48.867
Almost every single day of the year.
00:07:48.867 --> 00:07:49.887
I had three peach smoothie.
00:07:50.096 --> 00:07:55.047
So it was three peaches I'd get out and then 15 minutes later they'd be soft enough to just slide the skins off.
00:07:55.601 --> 00:07:58.661
And I would just slice them off the pit, kinda like the way you would cut an apple.
00:07:58.992 --> 00:08:00.041
'cause it was still pretty frozen.
00:08:00.041 --> 00:08:00.312
Right.
00:08:00.432 --> 00:08:04.632
And I put the peach chunks in my blender, a scoop of vanilla protein powder and milk.
00:08:05.531 --> 00:08:08.041
And then I'd put it in a jar and head to town.
00:08:08.117 --> 00:08:08.807
Yum.
00:08:08.971 --> 00:08:09.992
Well, yum.
00:08:09.992 --> 00:08:11.482
But also very handy.
00:08:11.872 --> 00:08:20.447
So that is Anna and I, I would suggest that is a very good way to get over the problem of how to peel.
00:08:21.137 --> 00:08:28.637
Anna, what do you do if you aren't, let's say you can't freeze them or don't freeze them How is like the normal way of peeling a tomato?
00:08:29.380 --> 00:08:39.140
Yeah, the standard way that people peel tomatoes is to use a sharp knife and cut an X in the bottom, and then toss those fresh tomatoes in boiling water.
00:08:39.451 --> 00:08:45.076
Blanch them and then take them out and put them in an ice bath and then you can slip the skins that way.
00:08:45.466 --> 00:08:59.067
The problem is, is that method when it's a hundred degrees outside is probably as close to hell as I would imagine hell is, is having to like grab hot tomatoes and try and get the skin off
00:08:59.442 --> 00:08:59.562
Yeah.
00:08:59.697 --> 00:09:02.096
you're also boiling other tomatoes.
00:09:02.096 --> 00:09:04.076
Like it's just, it's too much.
00:09:04.557 --> 00:09:10.287
But that's traditionally what they recommend in the Ball Blue Book Guide to Preserving and the USDA's website.
00:09:10.527 --> 00:09:16.917
There's still plenty of recipes out there doing that, but I think people are getting wise to the fact that method kind of sucks.
00:09:17.126 --> 00:09:19.226
You can do it, but it just kind of sucks.
00:09:19.856 --> 00:09:22.787
Yeah and by sucks we mean it sucks for you.
00:09:22.836 --> 00:09:29.397
The end result is great, but it's just like it takes, I hate it because it takes.
00:09:30.131 --> 00:09:31.451
Kind of a long time.
00:09:32.621 --> 00:09:37.782
It's very hard for me personally to keep all that moisture in the pot.
00:09:37.782 --> 00:09:39.522
I feel like I'm splashing.
00:09:39.701 --> 00:09:45.221
You get tomato water all over your universe,
00:09:45.567 --> 00:09:46.017
Yes.
00:09:46.481 --> 00:09:49.601
it's very hard and it's kind of like horribly slow.
00:09:49.961 --> 00:09:56.231
So if you were to drop into a boiling water bath, one tomato, well then that'll be blanched in about 30 seconds.
00:09:56.756 --> 00:09:58.167
Then you have to go one by one.
00:09:58.167 --> 00:10:03.836
And if you are like me, you wanna put 25 in there because it's let's get this party started, let's go.
00:10:04.376 --> 00:10:09.086
But then it takes so long, then you don't know which ones are done.
00:10:09.086 --> 00:10:11.307
You're pulling up with a slotted spoon.
00:10:11.636 --> 00:10:14.876
There's just no way to make it faster or less awful.
00:10:14.876 --> 00:10:22.662
And I tried really hard to find one, and I feel confident in saying that it's just a very tedious and messy step.
00:10:23.601 --> 00:10:26.361
and then waiting till they're cool enough to slide the skins off.
00:10:26.392 --> 00:10:30.261
Of course you're gonna try and do it too soon and you'll burn your fingers and feel annoyed.
00:10:30.261 --> 00:10:32.601
And then what do you do with these scalding hot skins?
00:10:32.601 --> 00:10:34.282
They're also leaking tomato water.
00:10:35.692 --> 00:10:36.861
I mean, it's fine to do.
00:10:36.861 --> 00:10:37.851
And maybe you don't hate it.
00:10:37.851 --> 00:10:40.042
Maybe you're like, great, I'm happy to do this.
00:10:40.091 --> 00:10:40.361
Great.
00:10:40.361 --> 00:10:40.692
Do it.
00:10:41.172 --> 00:10:41.501
But.
00:10:42.072 --> 00:10:53.672
For me personally, as Anna aptly said, it is a hellish procedure and it makes the whole thing, oh, there's another thing when you process tomatoes, okay, let's say this is your very first time canning tomatoes.
00:10:53.851 --> 00:10:59.341
For the processing time or the time that the tomato sauce has to be in the jar is longer than, let's say raspberry jam.
00:10:59.341 --> 00:11:00.422
it's like fairly long.
00:11:00.481 --> 00:11:00.692
Okay?
00:11:00.721 --> 00:11:04.052
25 minutes as opposed to 10 minutes, or probably longer.
00:11:04.052 --> 00:11:10.101
Really it's longer, so it just makes your whole day, your whole thing is just going to be longer.
00:11:10.912 --> 00:11:16.192
So that's what we recommend for peeling Anna, tell us about the tool that you love for coring.
00:11:16.568 --> 00:11:23.629
Yeah, so there's a little hand tool called a core, and you can use this for apples, but I like using'em for tomatoes as well.
00:11:23.839 --> 00:11:27.448
Sometimes the tomatoes I get from the farm Really big.
00:11:27.464 --> 00:11:32.293
Tops on them where the stem has come out, and it's really great to use.
00:11:32.474 --> 00:11:36.193
You just twist a little bit and you can pull that core out pretty well.
00:11:36.663 --> 00:11:40.504
Even if you push it all the way through, you're not really losing a lot of tomatoes.
00:11:40.504 --> 00:11:43.504
Usually it's the seeds and the tomato juice on the inside.
00:11:43.504 --> 00:11:45.423
When I throw'em in the freezer, I just throw'em in hole.
00:11:45.423 --> 00:11:49.474
But if I'm throwing them in the blender for a salsa or something.
00:11:49.573 --> 00:11:51.484
That's when I use my core.
00:11:51.964 --> 00:11:54.644
But you can use that for all kinds of fruit or vegetable.
00:11:55.933 --> 00:11:58.303
But you've never used one of those, is that right, Jenny?
00:11:58.421 --> 00:11:59.801
Yeah, I've never had one.
00:11:59.831 --> 00:12:06.581
I don't think I tried one for strawberries and I didn't find it to be so useful that I couldn't do without it.
00:12:06.581 --> 00:12:09.041
So that's the only core style I think I've ever used.
00:12:09.740 --> 00:12:13.730
I've used a melon baller to core pears, but that's not the same thing.
00:12:13.730 --> 00:12:15.650
So I just use a sharp knife.
00:12:15.650 --> 00:12:23.390
And actually that's a tool we should definitely have added maybe was for working with tomatoes, you need your sharpest knife because it will be annoying otherwise.
00:12:24.061 --> 00:12:27.660
will you tell us about the immersion blender that you use and that you love?
00:12:27.961 --> 00:12:28.542
Oh sure.
00:12:28.591 --> 00:12:32.932
I think any immersion blender is fantastic It has like a stainless steel blade.
00:12:33.177 --> 00:12:40.736
I used one for years that had a plastic your product gets hot in the pot, I don't really like using plastic in a boiling
00:12:40.822 --> 00:12:41.172
Right.
00:12:41.397 --> 00:12:42.626
just'cause I'm like, oh great.
00:12:42.626 --> 00:12:44.606
More plastic in my body.
00:12:45.006 --> 00:12:51.361
so I recommend getting one that's either a stainless steel or, or something that's not The immersion blender for something.
00:12:51.511 --> 00:12:52.621
Is it for tomato sauce?
00:12:53.131 --> 00:12:56.371
So I do love an immersion blender for all things in the kitchen.
00:12:56.402 --> 00:12:57.662
Love, love it.
00:12:57.662 --> 00:13:02.052
I'm just sort of waiting till I can find one or the yard, I'm just living without it and I miss it.
00:13:02.081 --> 00:13:03.221
They're really, really great.
00:13:03.672 --> 00:13:06.491
for ketchup and or barbecue sauce?
00:13:06.792 --> 00:13:18.942
There's several good tested recipes for those tomato products out there, and I've had very good results in cooking them in a crockpot and then just coming in every hour or two hours or whatever, and just with the.
00:13:20.201 --> 00:13:24.282
Immersion blender and that makes a very thick and smooth sauce.
00:13:24.672 --> 00:13:27.192
It's excellent for making, apple butter.
00:13:27.192 --> 00:13:37.662
I do the apple butter exactly the same way in the crockpot, and it just makes for a very smooth product that's very comparable to store bought in terms of texture and consistency.
00:13:37.662 --> 00:13:41.861
it's a very good way to do it, and less hands on time for you just standing at the stove.
00:13:42.596 --> 00:13:43.677
So I do love that.
00:13:43.677 --> 00:13:49.047
And an immersion blender is really great for making a good, smooth, basic tomato sauce.
00:13:50.006 --> 00:14:02.234
I use a blender and I skip the peeling entirely so you can can in jars, bits of tomato skin, or I guess it would be the whole skin in my case.
00:14:02.774 --> 00:14:09.104
As long as you don't have an Italian grandmother who will, you know, disown you for doing so, I find that.
00:14:09.869 --> 00:14:14.828
I don't find any taste difference or textured, objection with blending my tomatoes.
00:14:14.828 --> 00:14:21.149
I just core them in like half or quarter them and toss them into a blender so I have a bigger volume, right?
00:14:21.149 --> 00:14:25.349
And just blend and then pour that into my cooking pot and then start cooking everything down.
00:14:25.948 --> 00:14:29.639
So that's what has worked for me and it's safe to do that.
00:14:29.639 --> 00:14:32.099
And I don't have an Italian grandmother to tell me not to do that.
00:14:32.099 --> 00:14:39.719
I think it's easier and I feel like it's probably just a little bit more fiber for my kids and me, and it's no problem in my mind.
00:14:39.719 --> 00:14:42.629
So I do my basic tomato sauces with a blender.
00:14:42.629 --> 00:14:43.528
So you could do that too.
00:14:43.672 --> 00:14:47.499
what other ways can we suggest people use?
00:14:47.604 --> 00:14:49.313
Anna, tell us about your food processor.
00:14:49.547 --> 00:14:54.333
Yeah, so last, I wanna say Black Friday I got a Ninja blender.
00:14:55.048 --> 00:14:56.578
Food processor combo.
00:14:56.759 --> 00:15:04.619
It was on sale and I had been trying to use a small food processor, a two cup food processor for salsa making, and it was just annoying.
00:15:05.038 --> 00:15:15.278
It was not the size I wanted, but this nine cup, I think it's nine cups, food processor is fantastic because not only does it come with discs that you can do.
00:15:16.264 --> 00:15:18.333
diced or shredded from the top.
00:15:18.333 --> 00:15:22.653
I use it when I'm doing onions, peppers, and hot peppers for my salsa.
00:15:23.203 --> 00:15:26.484
I will throw in, two quartered.
00:15:27.673 --> 00:15:31.274
and get like the perfect diced onion.
00:15:31.543 --> 00:15:34.813
Then I can throw those in the pot with my tomatoes for salsa.
00:15:35.083 --> 00:15:40.844
It's just so much easier and I love it because I don't have to chop everything by hand.
00:15:41.504 --> 00:15:50.714
much as I wanna be a sous chef, I don't enjoy that part of salsa making shortcuts I can do to make it quicker.
00:15:51.734 --> 00:15:53.864
wanna pass along to you so that you can also.
00:15:54.599 --> 00:16:00.089
Have a fun time canning and preserving and not be hot and sweaty in the kitchen and stressed out.
00:16:01.178 --> 00:16:08.389
some of the joy that Jenny and I have from processing food comes from finding shortcuts that work for you and your family.
00:16:08.509 --> 00:16:13.519
So the food processor was a great tool for me and I hope it will be for you as well.
00:16:14.339 --> 00:16:17.639
why don't you talk about the electric food mill?
00:16:18.874 --> 00:16:25.693
Okay, so I had an electric food mill that was sent to me, this is quite a while ago by ball and it was really cool.
00:16:26.203 --> 00:16:26.653
Cool.
00:16:26.653 --> 00:16:27.134
As in cool.
00:16:27.134 --> 00:16:28.964
It did exactly what it was supposed to do.
00:16:29.063 --> 00:16:29.724
It was great.
00:16:30.124 --> 00:16:33.094
I don't love cleaning appliances like that.
00:16:33.494 --> 00:16:38.144
you are always gonna have to do some dishes, but at the time my kitchen was teeny tiny.
00:16:38.144 --> 00:16:43.004
I had no dishwasher and it was like an appliance it was great, but I just did not have room to keep.
00:16:43.004 --> 00:16:47.864
And I think I gave it to my sister because it just, I didn't have the room to store something.
00:16:47.864 --> 00:16:49.604
I didn't use that often.
00:16:50.384 --> 00:16:51.254
But they're out there.
00:16:51.254 --> 00:16:51.823
They're available.
00:16:51.823 --> 00:16:52.964
You could thrift one.
00:16:53.063 --> 00:16:56.604
And I would say that especially if you get a good deal on it, you should definitely try it.
00:16:57.234 --> 00:17:15.233
It looks like the analog food mills that our grandmothers would've clamped to a countertop or table, and it has a cone coming out of the side and then a, a slide for the sauce to come out of into a bowl on the countertop, which people use those to do apple sauce.
00:17:15.699 --> 00:17:24.759
I mean, the analog versions of those with the conical shape, lying sideways, or more horizontal rather than vertical, were very popular.
00:17:24.759 --> 00:17:26.469
And it's an electric version of that.
00:17:27.098 --> 00:17:41.179
I know my mom used the hand crank version for several things when I was growing up and it was just like a lot of cranking, just if you'd use it all the time, it gets tiresome, but also you may not mind that, I just love something that's never gonna break.
00:17:41.358 --> 00:17:45.618
You're not gonna find something that works better for the job it was intended.
00:17:45.618 --> 00:17:46.519
Those work really great.
00:17:47.398 --> 00:17:59.271
So after I got rid of the electric food mill, which I just didn't have room to store really, I used exclusively a food mill called the Oxo Food Mill.
00:17:59.271 --> 00:18:00.951
And it's a little bit different shape.
00:18:01.041 --> 00:18:02.092
It's a bowl.
00:18:02.842 --> 00:18:05.392
The disc is at the base of the bowl.
00:18:05.392 --> 00:18:13.832
It has little feet, like a space shuttle that come out and you set it on top of a bowl, so it's more of a vertical setup rather than a left to right or horizontal setup.
00:18:14.281 --> 00:18:16.592
And into the hopper, which is pretty big.
00:18:16.801 --> 00:18:21.551
You can just in your cooked tomatoes or I use it for applesauce.
00:18:21.551 --> 00:18:23.442
I use it a lot in other things.
00:18:23.442 --> 00:18:28.602
So to me, it was more versatile and a little bit easier to use, and definitely easier to clean.
00:18:28.896 --> 00:18:29.856
The electric food mill.
00:18:30.126 --> 00:18:35.406
So I love the Oxo brand food mill for processing tomatoes.
00:18:35.507 --> 00:18:43.576
And pretty much any cooked fruit or veg, that sucker works so fantastic and it's very easy to wash in the dishwasher or by hand.
00:18:43.576 --> 00:18:44.507
It all comes apart.
00:18:44.626 --> 00:18:46.007
There's no nooks and crannies.
00:18:46.442 --> 00:18:48.632
Other than the disc, but that's unavoidable.
00:18:48.741 --> 00:18:50.422
It's much easier to clean.
00:18:50.422 --> 00:18:53.122
I think I would go so far to say it is much easier to clean.
00:18:53.511 --> 00:18:56.692
Have you used one of those or do you not have one of the bowl shaped food mills?
00:18:56.696 --> 00:18:56.846
Anna.
00:18:57.096 --> 00:19:04.767
When the kids were really little, I had one to make, fruit purees for the kids, like when they were babies, and it was very small.
00:19:04.767 --> 00:19:09.086
So I know exactly what you're talking about, but I've never seen a big one or used a big one.
00:19:09.152 --> 00:19:10.622
But I know that you love yours.
00:19:12.031 --> 00:19:16.801
When you see women getting the teeny tiny.
00:19:17.116 --> 00:19:19.126
Everything to process food for babies.
00:19:19.126 --> 00:19:24.676
Don't you wish for them that they would just be gifted a full-size thing so they can use it for longer than six months?
00:19:25.576 --> 00:19:27.586
I feel like that's such a crime and I feel so sorry.
00:19:27.586 --> 00:19:36.207
Every time I'm like, they just don't like, especially if you're a new mom, you don't know what the heck you're gonna need or for how long you just, you're just signing up for everyone else is signing up for.
00:19:36.257 --> 00:19:40.547
But if you were gifting or shopping for yourself for early mom hood.
00:19:41.342 --> 00:19:46.321
I got mine at my baby shower because I have a very practical friend, also named Anna.
00:19:46.321 --> 00:19:47.251
She's my other Anna.
00:19:47.612 --> 00:19:53.311
She gave me that Oxo food mill and my, that was literally 14 years ago, and I use it often.
00:19:53.432 --> 00:19:58.291
It's so good and it's just more like family size, not baby size.
00:19:58.291 --> 00:20:05.701
You don't need to make, there's such a short amount of time that you need to make a tiny amount of puree, like you will use a full-size one forever.
00:20:07.037 --> 00:20:10.116
what else do we have on our list, Anna, for tools that we love?
00:20:10.116 --> 00:20:10.836
Anything else?
00:20:11.106 --> 00:20:13.717
I had one, an electric food mill.
00:20:13.747 --> 00:20:18.717
This was something that is similar to the hand crank one that you were I found one.
00:20:19.211 --> 00:20:25.436
On Amazon, I spent almost a hundred bucks on Like, oh, this will be so great for tomatoes, right?
00:20:25.436 --> 00:20:31.317
Because it separates out the seeds, the skins, the whatever, and just gives you this lovely tomato sauce.
00:20:32.217 --> 00:20:36.596
I tried putting that thing together and it took a long time.
00:20:37.287 --> 00:20:43.707
had a million pieces and in the end it just got clogged and I was so disappointed.
00:20:43.987 --> 00:20:47.106
And it was past the point when I could return it.
00:20:47.106 --> 00:20:52.836
And so now it just stares at me in the garage every time I go out to the garage.
00:20:53.166 --> 00:20:56.047
So either I need to get rid of it, number one.
00:20:56.281 --> 00:21:00.392
Or face my fears and try it again and see if I can get it to work.
00:21:00.422 --> 00:21:04.061
But if you have one that you love, let us know.
00:21:04.382 --> 00:21:04.771
Yeah.
00:21:05.051 --> 00:21:14.932
it's usually a plugin type of situation with a little motor, and you just drop it in the hopper on the top, and then it goes through this auger and then comes out the front.
00:21:14.932 --> 00:21:19.471
But I don't know I have seen, some like heavy duty.
00:21:19.791 --> 00:21:26.721
Varieties, maybe homemade on YouTube or Instagram, people doing like big tomato processing parties.
00:21:26.721 --> 00:21:30.882
Maybe they're like have like Italian grandmothers standing there, this is how you do it.
00:21:31.152 --> 00:21:39.922
But I did, it wasn't everything I hoped it would be, which is always frustrating when you want something to work really badly and you spend money on it.
00:21:41.922 --> 00:21:49.521
I actually think that the most important part of it is, like you said, it gets clogged.
00:21:49.521 --> 00:21:57.412
that tells you it's gonna be a pain to clean, and that's what's so annoying about spending money on these things, and that's what makes it really.
00:21:57.727 --> 00:21:59.287
Not fun to use.
00:21:59.767 --> 00:22:09.277
The other type of tool that you could explore for processing tomatoes is a KitchenAid mixer attachment, and I know there's other brands of mixers that also sell attachments,
00:22:09.376 --> 00:22:09.791
Oh yeah.
00:22:09.856 --> 00:22:12.856
You may have to explore those for whatever brand you may have.
00:22:13.277 --> 00:22:20.717
But I do have a KitchenAid mixer and if you start looking like I would go to the KitchenAid website and just look at all their accessories that they sell.
00:22:20.777 --> 00:22:26.146
They sell a lot of accessories and they clip onto the front or screw on, I guess to the very front.
00:22:26.807 --> 00:22:30.136
And we have used the meat grinder.
00:22:30.507 --> 00:22:31.767
I think I got that before we were married.
00:22:31.767 --> 00:22:39.192
I think I've had that meat grinder for 15 years, a long time, it is, Just very strong.
00:22:39.221 --> 00:22:42.071
Like the motor in your KitchenAid is a strong motor.
00:22:42.152 --> 00:22:51.172
And then the attachments it's nice because it's not as big as a whole new appliance and it makes use of that one invested purchase that you have, that one big KitchenAid.
00:22:51.602 --> 00:22:59.967
They have like a sifter and a scale like for making, I really wanna get it for my daughter for making macarons the little cookies, that you sift the almond flour.
00:23:00.186 --> 00:23:00.517
Yeah.
00:23:00.711 --> 00:23:08.951
They have just more attachments than you might realize, and they have one that is specifically for pro, it's like a food processing attachment.
00:23:09.281 --> 00:23:17.412
And yeah, the hopper isn't really big, but it might be a really great option, especially if you live in a smaller space or a smaller apartment or something.
00:23:17.951 --> 00:23:20.951
I think that would be the hot ticket.
00:23:21.162 --> 00:23:33.761
That would be something to check out and I've seen a bazillion KitchenAid attachments listed on Poshmark or eBay, so that might also be a great place to look if you're shopping for something like that to help you process all your preserves, but tomatoes for sure.
00:23:34.511 --> 00:23:35.652
what else do we have on our Ian?
00:23:35.757 --> 00:23:39.596
I was just gonna mention also like Jenny talked about her pressure canning cookbook.
00:23:39.596 --> 00:23:43.196
They are available in tractor supply stores, which is amazing.
00:23:43.257 --> 00:23:49.076
There's a lot of tractor supply stores out there, so it is available at Tractor Supply stores and Amazon.
00:23:49.596 --> 00:23:52.267
But also in any of your bookstores, you can ask for it there.
00:23:52.356 --> 00:23:55.626
So we love our good independent book sellers, of course.
00:23:55.880 --> 00:24:01.579
And then I also have eBooks and video courses on all things tomatoes.
00:24:01.849 --> 00:24:04.220
You can find that@smarthomecanning.com.
00:24:04.250 --> 00:24:05.359
It's really easy.
00:24:05.569 --> 00:24:10.430
It's$10 for a mini course and$40 for a whole course.
00:24:10.579 --> 00:24:13.789
So Jenny and I both offer options for.
00:24:14.295 --> 00:24:17.115
Tomatoes or other food preserving.
00:24:17.204 --> 00:24:26.634
And as always, we love pointing people toward extension office The internet is a great place to find the USDA website, the National Center for Home Food Preservation.
00:24:26.934 --> 00:24:35.184
We always want to give you the best up to date scientifically proven and tested recipes so that you are as safe as possible when you do your home canning.
00:24:35.785 --> 00:24:41.335
And, so you will also find that in Jenny's book or my courses as well.
00:24:41.700 --> 00:24:41.789
yes.
00:24:42.224 --> 00:24:43.605
Thank you for mentioning that, Anna.
00:24:44.085 --> 00:24:59.025
I think this is a great episode and I feel like for the most popular Preserve tomatoes, it's really great to have tools that make it easier to get to the fun part, and you're not spending all kinds of time just cleaning up tomato water all over your kitchen.
00:24:59.075 --> 00:25:03.325
Hopefully these tools were really helpful to you and we look forward to seeing you next time.
00:25:03.969 --> 00:25:04.929
That's our show.
00:25:05.199 --> 00:25:08.739
We don't want you to miss an episode, so please be sure to subscribe.
00:25:09.038 --> 00:25:13.689
If you found this episode helpful and informative, please give our show a rating and review.
00:25:14.019 --> 00:25:17.348
